Garlic Herbs de Blanco Roasted Potatoes

Great side to any meal, crispy outside with perfectly tender inside.
Ingredients
1/2 lb baby red potatoes, quartered
2-3 cloved garlic, minced
1 tsp kosher salt
1/2 tsp pepper
1 tsp Herbs de Blanco
1/4 cup parmesan cheese, grated
2 tbsp olive oil
3 tbsp parsley, fresh (optional)
Instructions
Preheat the oven to 400 degrees.
In a large bowl, combine the potatoes, garlic, salt, pepper, Herbs de Blanco, parmesan cheese, and olive oil. Toss gently until well combined and then spread evenly onto the baking sheet.
Bake for 30 minutes (tossing once half-way with a spatula) or until the outsides are crisp and a fork easily pierces a potato. Depending on size of potato pieces, this time can increase to 40 minutes.
Remove from oven as sprinkle fresh parsley if desired. Serve hot and enjoy!
